DIY: Raw Vegan "Pasta" Fettuccine Alfredo
This is my favorite raw dish of all time!!! I'm usually not a fan of carbs because I get really tired after eating them but this version of "pasta" is perfect. Okay, many of you might be thinking right now 'how on earth can zucchini taste like fettuccine?!' but I'm telling you it tastes even better.
Recipe for Raw Vegan "Pasta" Fettuccine
Ingredients
4 Zucchini
Sauce:
1/2 cup Cashews (soaked for a minimum of one hour)
3 tbsp Extra Virgin Olive Oil
4 Cloves Raw Garlic
1/4th cup Water
Directions
Peel/Grate the zucchini to make the raw fettuccine.
Place all the ingredients for the Alfredo sauce into a blender and blend until smooth.
Transfer the sauce into the salad bowl.
Top it off with fresh parsley and wholah!
