I've often pondered this idea because many people think they're mutually exclusive. I have surely been guilty of this in the past; when life starts to get overloaded with work and responsibilities, eating healthy gets pushed to the side. The irony is that quality nutrition is needed even more when times of stress are high! So, how do we find the delicate balance of healthy eating while constantly being on the go?
My personal secret is to make LOTS of veggie snacks and salads to grab and eat. If I don't take a little bit of time at the beginning of the week to prepare some quick & easy meals, then I'll get in trouble. I know that if I don't have something to snack on during the day, then I'll ravish through the kitchen in that evening while thoughts of pizza and pasta enter my mind.
Here's one of my go-to recipes....
1/2 cup of black beans
1/2 cup cherry tomatoes
2-3 leaves of kale
1/4 cup broccoli
1/4 cup chopped onions
a handful of cashews
a sprinkle of pine nuts
Storing these salads in glass jars keeps them fresher longer, especially if you store them in the fridge. Also, if you're looking for more flavor than add some dressing just before eating eat.
