Time to harvest all your hard work in the garden and create yummy, gorgeous salads!
Ingredients
1 cup wheat berries
8 oz sugar snap peas
4 cups chopped kale
1/4 cup red vine vinaigrette
2 cups fresh local blueberries
1/2 cup chopped toasted pecans
3/4 cup feta cheese
Directions
1. Add wheat berries and 4 ups of water into a boiling pan. Simmer for 1 hour.
2. Cook peas in boiling water with a hint of sea salt then cover for 2 minutes and drain. Plunge into ice water and drain & dry.
3. Toss kale, wheat berries, vinaigrette in a large bowl. Stir in blueberries, pecans, and sugar snap peas.
4. Sprinkle with feta and enjoy!
