The Greeks were the first ones to cultivate this plant and discover all the wonderful uses and document describing carob was over 4,000 years ago!
Carob (Ceratonia siliqua) comes from the pod of the tree which technically a legume about 15 to 30 centimeters long. These dark brown pods are rich in vitamin A and B vitamins along and have 8% protein. Carob is often used as a chocolate substitute and you'll understand why once you try it!
The pods are collected when they are brown, the pods are then broken up and the hard seeds are removed.
Next, the empty pods are washed and then dry roasted and ground into a fine powder.
Make This Super Simple Carob Avocado Mousse!
What You'll Need
2 Avocados
1/3 Cup Coconut Milk
1/3 Cup Carob Powder
2 Tablespoons Honey
Directions
Add all ingredients into a food processor and blend under smooth. Store in the fridge for an hour until the mousse becomes firm. Serves two. Enjoy!
*Update: a new study was just published in April of 2020 showing that carob has the potential to help with metabolic syndrome.
